For the Fish:

  • 4 white fish fillets (cod, haddock, or any firm white fish)
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup cold beer (or sparkling water for non-alcoholic version)
  • 1 tbsp vegetable oil (for frying)

For the Chips:

  • 4 large potatoes, peeled and cut into thick fries
  • 1-2 tbsp vegetable oil (for frying)
  • Salt, to taste

Instructions

1. Prepare the Potatoes (Chips):

  • Peel the potatoes and cut them into thick fries.
  • Place them in a bowl of cold water for about 30 minutes to remove excess starch.

2. Make the Batter:

  • In a mixing bowl, combine the flour, baking powder, salt, and pepper.
  • Slowly add the cold beer (or sparkling water), stirring until a smooth batter forms.

3. Fry the Chips:

  • Heat vegetable oil in a deep fryer or large pot over medium heat
  • Fry the potato chips in batches until they are golden and crispy (about 5-7 minutes).
  • Remove and drain on paper towels. Sprinkle with salt.

4. Fry the Fish:

  • Coat each fish fillet with the batter, ensuring it's evenly covered.
  • Carefully lower the fillets into the hot oil and fry for about 4-5 minutes, or until golden and crispy.
  • Remove the fish from the oil and drain on paper towels.

5. Serve:

  • Serve the fish and chips immediately with tartar sauce, lemon wedges, and a sprinkle of salt. Optionally, you can add malt vinegar for extra flavor.

  • If you don’t have beer, sparkling water or club soda works as a substitute for the batter.
