- 1 cup rolled oats
- 1 cup desiccated coconut
- 1/2 cup plain flour
- 1/2 cup brown sugar
- 1/2 cup unsalted butter
- 2 tablespoons golden syrup
- 1 teaspoon baking soda
- 1 tablespoon boiling water
Preheat the oven to 160°C (320°F). Grease and line a 20x30cm baking tray with parchment paper.
In a large mixing bowl, combine the rolled oats, desiccated coconut, self-raising flour, and brown sugar.
In a saucepan, melt the butter and golden syrup together. Stir in the baking soda mixed with boiling water (it will bubble up).
Pour the butter mixture into the dry ingredients and stir to combine.
Press the mixture into the prepared tray and bake for 30 minutes or until golden brown.
Allow the slice to cool completely before cutting it into squares

For a healthier option, you can substitute the self-raising flour with wholemeal flour and use coconut oil instead of butter.
