Ingredients

  • 2 ripe bananas, mashed
  • 1 cup all-purpose flour
  • 1/2 cup sugar (or honey/maple syrup)
  • 1/4 cup melted butter or oil
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 large egg
  • 1/4 cup milk (or buttermilk)
  • Optional: 1/2 cup chopped nuts (walnuts or pecans)

Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  • In a large bowl, mash the bananas with a fork until smooth.
  • Add sugar, egg, melted butter, and vanilla extract to the mashed bananas. Stir well.
  • In a separate bowl, mix the dry ingredients: flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring gently. If desired, fold in nuts or any other add-ins.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 50 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread rest for 10 minutes before removing from the pan. Cool completely on a wire rack before slicing.

Notes

  • For a healthier version, try substituting sugar with stevia or maple syrup and using whole wheat flour instead of all-purpose flour.
  • You can also add chocolate chips or dried fruits for added flavor.
