Ingredients
  

1 lb Ground Beef

  • Choose 80–85% lean beef for juiciness. Grass-fed beef gives a richer flavor.

1 tsp Salt

  • Brings out the meaty, savory taste.

½ tsp Black Pepper

  • Adds mild heat. Use more for extra spice.

½ tsp Garlic Powder

  • Gives a smooth garlic flavor. You can swap or pair it with onion powder.

½ tsp Onion Powder (optional)

  • Adds aroma without using fresh onions.

1 tsp Dried Sage

  • Gives the sausage that traditional breakfast flavor. You can also try thyme instead.

½ tsp Dried Thyme

  • Works well with sage and adds depth.

¼ tsp Red Pepper Flakes (optional)

  • Adds a bit of heat. Adjust to your taste.

1 tsp Brown Sugar (optional)

  • Balances the savory with a hint of sweetness.

1 tbsp Vegetable Oil (if pan-frying)

  • Prevents sticking. Nonstick spray also works if using a nonstick skillet.

Instructions
 

Step 1: Season the Meat

  • Put ground beef in a large bowl. Add salt, pepper, garlic powder, onion powder (if using), sage, thyme, and red pepper flakes. For a touch of sweetness, mix in some brown sugar.

Step 2: Mix Gently

  • Use your hands to combine the seasonings and meat without overmixing. This keeps the patties tender.

Step 3: Taste and Shape

  • Cook a small piece of the mixture to check the flavor. Adjust the spices if needed. Then form the meat into small patties about 2–3 inches wide and ½ inch thick.

Step 4: Cook the Patties

  • Heat a nonstick skillet on medium. Add a little oil if necessary. Cook the patties in a single layer for 4–5 minutes per side until they’re browned and fully cooked (internal temp should be 160°F or 71°C).

Step 5: Drain and Serve

  • Place the cooked patties on paper towels to soak up extra grease. Serve right away or keep warm in a low oven until ready to eat.
