Ingredients

Dry Ingredients:

  • 1 cup of all-purpose flour – Forms the foundation of your pancake batter, ensuring a soft and fluffy texture.
  • 1 tbsp of brown sugar – Offers a light molasses flavor, reminiscent of French toast.
  • 1 tsp of baking powder – Helps the pancakes rise and stay airy.
  • ½ tsp of baking soda – Works in tandem with the buttermilk to enhance fluffiness.
  • ½ tsp of ground cinnamon – Adds a cozy, spiced warmth to the batter.
  • ¼ tsp of ground nutmeg (optional) – Gives a rich, comforting depth of flavor.
  • ¼ tsp of salt – Balances sweetness and intensifies the overall flavor.

Wet Ingredients:

  • ¾ cup of buttermilk – Makes the pancakes soft and adds a slight tang. You can replace it with milk mixed with 1 tsp of vinegar or lemon juice if necessary.
  • 2 large eggs – Imparts richness and binds the ingredients together.
  • 1 tsp of vanilla extract – Adds a warm, sweet aroma to the batter.
  • 2 tbsp of melted butter or oil – Keeps the pancakes moist and adds a buttery finish.

Optional Toppings:

  • Maple syrup – The classic topping that perfectly completes your pancakes.
  • Fresh berries or banana slices – Brings natural sweetness and a pop of color.
  • Whipped cream or Greek yogurt – A rich, creamy topping for extra indulgence.
  • Powdered sugar – A delicate dusting to elevate your pancakes.
  • Candied pecans or chopped nuts – For a crunchy contrast and added texture.

Instructions

Step 1: Combine the Dry Ingredients

  • In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg (if using), and salt. Make sure everything is well-mixed and there are no clumps.

Step 2: Mix the Wet Ingredients

  • In another bowl, beat the eggs and then add the buttermilk, melted butter (or oil), and vanilla extract. Stir everything together until well combined.

Step 3: Combine the Wet and Dry Mixtures

  • Pour the wet ingredients into the dry ones. Gently stir with a spatula or whisk until they are just combined. Don’t overmix—small lumps are okay and will make the pancakes fluffier.

Step 4: Preheat and Grease the Griddle

  • Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray. Test the temperature by dropping a small amount of water on the surface; if it sizzles, it’s ready for the batter.

Step 5: Cook the Pancakes

  • Pour about ¼ cup of batter onto the hot skillet for each pancake. If needed, spread it slightly with the back of a spoon. Cook for 2–3 minutes on each side or until the edges are set and bubbles form on the top. Flip the pancake carefully and cook the other side until it turns golden brown.

Step 6: Keep Warm

  • Place the cooked pancakes on a baking sheet and keep them warm in a low oven (200°F/95°C) while you finish cooking the rest of the pancakes.

Step 7: Serve and Enjoy

  • Stack your pancakes and add your favorite toppings like maple syrup, fresh berries, or whipped cream. Serve warm and enjoy the delicious combination of French toast and pancakes!
