  • ¼ cup (60g) melted unsalted butter
  • 1 teaspoon lemon zest (optional)

Instructions
 

Step 1: Prepare the Batter

  • Beat the eggs and sugar until light and fluffy. Stir in cream and vanilla. In a separate bowl, combine flour, baking powder, and salt. Fold into wet ingredients, then add melted butter and zest. Do not overmix.

Step 2: Chill the Batter

  • Cover and refrigerate the batter for at least 30 minutes (or overnight) for best results.

Step 3: Bake the Madeline Cookies

  • Preheat the oven to 375°F (190°C). Grease Madeleine pan well. Fill molds ¾ full. Bake for 10–12 minutes. Let rest for 2 minutes, then transfer to a rack.

Step 4: Add the Final Touches

  • Once cool, dust with powdered sugar or glaze if desired.
