For the Banana Oat Bread:
- 3 ripe bananas, mashed well
- 2 cups of old-fashioned rolled oats
- 2 large eggs, at room temperature
- ⅓ cup plain Greek yogurt
- ⅓ cup honey or maple syrup, your choice
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- Optional: ⅓ cup of chocolate chips or chopped nuts for added texture
Start by preheating your oven to 350°F (175°C). Prepare a loaf pan by either greasing it lightly or lining it with parchment paper.
In a mixing bowl, mash the bananas until smooth. Stir in the eggs, yogurt, and your choice of honey or maple syrup.
Add the baking soda, baking powder, vanilla extract, cinnamon, and salt. Mix well until everything is evenly combined.
Gently fold in the oats and, if desired, chocolate chips or chopped nuts. Let the mixture rest for about 5 minutes.
Transfer the batter to the loaf pan and spread it evenly with a spatula.
Bake for 50 to 55 minutes, or until a toothpick inserted in the center comes out clean.
Allow the loaf to cool in the pan for 10 minutes, then move it to a wire rack to cool completely before slicing.
