Ingredients
  

For the Banana Oat Bread:

  • 3 ripe bananas, mashed well
  • 2 cups of old-fashioned rolled oats
  • 2 large eggs, at room temperature
  • ⅓ cup plain Greek yogurt
  • ⅓ cup honey or maple syrup, your choice
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • Optional: ⅓ cup of chocolate chips or chopped nuts for added texture

Instructions
 

  • Start by preheating your oven to 350°F (175°C). Prepare a loaf pan by either greasing it lightly or lining it with parchment paper.
  • In a mixing bowl, mash the bananas until smooth. Stir in the eggs, yogurt, and your choice of honey or maple syrup.
  • Add the baking soda, baking powder, vanilla extract, cinnamon, and salt. Mix well until everything is evenly combined.
  • Gently fold in the oats and, if desired, chocolate chips or chopped nuts. Let the mixture rest for about 5 minutes.
  • Transfer the batter to the loaf pan and spread it evenly with a spatula.
  • Bake for 50 to 55 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the loaf to cool in the pan for 10 minutes, then move it to a wire rack to cool completely before slicing.
