Ingredients
  

  • 4 Italian sausages (pork or chicken)
  • 3 bell peppers (red, yellow, green), sliced
  • 1 large red onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • Optional: Crushed red pepper flakes for heat
  • Fresh parsley (for garnish)

Instructions
 

  • Preheat oven to 425°F (220°C).
  • Line a baking tray with parchment paper or foil for easy cleanup.
  • Slice the peppers and onions and place them on the tray.
  • Add sausages to the tray, spacing them out.
  • Drizzle olive oil over everything.
  • Sprinkle garlic powder, oregano, basil, salt, and pepper.
  • Toss veggies gently to coat evenly.
  • Roast in the oven for 30 minutes, flipping sausages halfway through.
  • Remove from oven and let it rest for 5 minutes.
  • Garnish with fresh parsley and serve with bread, rice, or over pasta.
