Ingredients
  

  • 1.2 to 1.5 kg corned silverside
  • 1 onion, peeled and quartered
  • 2 carrots, roughly chopped
  • 2–3 bay leaves
  • 1 tablespoon brown sugar
  • 2 tablespoons vinegar (malt or apple cider)
  • 1 tablespoon whole peppercorns
  • 4–6 whole cloves
  • Water, to cover the meat
  • Optional: 1 teaspoon mustard seeds or a dash of Worcestershire sauce

Instructions
 

  • Place the silverside into the slow cooker.
  • Add onion, carrots, bay leaves, peppercorns, cloves, and brown sugar.
  • Pour vinegar over the top, then add enough water to just cover the meat.
  • Cover and cook on LOW for 8 hours, or until tender.
  • Once cooked, remove meat and let it rest for 10 minutes before slicing.
  • Serve warm with mashed potatoes, steamed veggies, or white sauce.

Notes

  • For added depth, swap some water with beef stock.
  • Leftovers are great for sandwiches the next day.
  • Don’t boil corned beef directly—slow cooking ensures it's tender and flavorful.
  • Skim foam if needed after a few hours of cooking.
